Fractionation of Tilapia By-Product Protein Hydrolysate Using Multilayer Configuration of Ultrafiltration Membrane

Production of small-sized peptides is significant because their health benefits. Ultrafiltration (UF) membrane provides an effective fractionation on a large scale. Thus, the present study was aimed to evaluate performance multilayer UF in fractionating tilapia fish by-product (TB) protein hydrolysate by observing permeate flux, peptide transmission, and distribution under different stirring speed, pH feed solution, salt concentration (NaCl). The process carried out using dead-end system that consists stack two sheets with (10/5 kDa) similar (5/5 pore sizes one device. highest flux kDa–39.5 47.3 L/m2.h; 5/5 kDa– 15.8 20.3 L/m2.h) transmission kDa–51.8 61.0%; kDa–18.3 23.3%) for both configurations were obtained at 3.0 bar, 600 rpm, 8, without addition salt. It also found permeates enriched small-size (<500 Da) 0.58 g/L 0.65 as compared large-sized (500–1500 0.56 0.36 kDa). This might indicate enrichment through which could potentially enhance biological activity fraction.
